DAYMARK 1683: BRITISH RUM, ISLAND STYLE

100% British Made Rum
Inspired by the maritime heritage of the Isles of Scilly, a cluster of island gems off the coast
of Cornwall, this distinctive British small batch rum is triple distilled and infused with
samphire and sea salt to bestow an unmistakable flavour.
Our namesake is a unique Daymark on the island of St Martin’s, where the founding family
have had a house for some 40 years. The Daymark was built in 1683 to aid Atlantic
mariners, it is the earliest surviving example of a navigation beacon in the British Isles and
continues to be an iconic sight within this beautiful archipelago.
The islands boast a distinctive landscape, quality of life and ethos like no other. Our rum
encapsulates the islands into a unique blend drawing on the rich heritage and simpler way
of life.

Process

Unusually, we ferment and distil from 100% molasses as opposed to the more commonly
used sugar cane syrup. We believe using molasses intensifies the flavour, producing a
richer spirit. The effect of triple distilling molasses in copper alembic stills produces
gorgeous tastes, heightened by smoothness that warms but never burns.
In each of our ‘cooks’ we macerate with the hand-picked Samphire and sea salt.
Additionally, we are one of only a few UK producers to offer a complete product including
distilling and manufacturing our base spirit from scratch.
Tasting Notes: Daymark 1683 Original has a unique and delicious taste on the palate.
Initially offering notes of raisins, cracked caramel and treacle, followed by the arrival of the
slightly salty samphire that finishes the experience.

Mixers

For The Henley Festival, we are delighted to have partnered with Long Tail Mixers. These
irresistible mixers bring unique pairings to complement your favourite dark spirits.
Their carefully selected range of flavours are blended from natural ingredients with
carbonated spring water to produce unique and balanced mixers, perfect to pair with your
spirit of choice or to enjoy as soft drinks on their own. Flavours include Island Spice, Blood
Orange and Ginger & Lime.

Cocktails

Daymark 1683 is lucky to collaborate and work with a Head Barman from a leading
London Club. Ron has created some bespoke cocktails using Daymark 1683, that stand
out from your classic mojito. Our unique cocktails bring a distinctive flavour to any cocktail
list. Why not see for yourself?
